BANANA protein muffins
Hi guys!
This past weekend I made one of our household favorites. I haven’t made these muffins in awhile and I forgot how good they are! I know you will love them, so I had to share the recipe with you. Be warned. You won’t want just one ;)
Banana Protein Muffins
Ingredients:
¼ cup vanilla protein powder (I use plant-based, Vega, with greens)
6 pitted medjool dates, chopped
3 bananas, mashed
2 tbsp unsweetened applesauce
1 cup whole wheat pastry flour
¼ cup ground flax meal
¾ tsp baking soda
1 tsp baking powder
1 tsp cinnamon
2 tbsp coconut oil (melted)
¼ cup maple syrup
2 egg whites
1 tsp vanilla extract
Optional - ¼ cup chopped walnuts
Optional – 2 tbsp chia seeds (but I always add!)
Oats for decorating
Directions:
Spray or grease a 12 serving muffin pan. Preheat oven 350 degrees. Mix all dry ingredients in one large bowl. Mix all wet ingredients in a separate bowl. Combine wet to dry ingredients. Add in walnuts and chia seeds if using. Pour about ¼ cup of batter in each muffin cup. Top with a few oat flakes. Bake until toothpick comes out clean…about 25-30 minutes.
NOTE: this original recipe is for a Blueberry Banana Bread. But I used dates because I didn’t have blueberries at home and we loved them. Another time I did use the blueberries and we didn’t like them (it was just too mushy??).So I went back to the dates.And although it is a bread, I’ve always made them as muffins.Everyone loves them!

PS: This time I only had 2 bananas on hand so I used one small kids cup of applesauce instead of just 2 tablespoons and they came out perfect
